Camping polenta
Cook it in bacon fat–simply the best
At home
Mix in bowl (this helps prevent lumps)
- 1 cup polenta (coarse ground corn meal)
- 1 cup cold water 4 cups water altogether
Boil in large pot
- 3 cups water
Stir moistened polenta into boiling water, then add
- ½ teaspoon salt (more or less)
Cook at low boil until quite thick, 20-40 minutes. Stir often to prevent lumps and sticking
Eat some for dinner and pour the rest into a greased 28 ounce can (I save them when I make pumpkin pie)
At campsite
- Start bacon on uphill side of grill
- Shake polenta partway out of can
- Cut 3/4 inch slices and cook on downhill side of grill
- When the bacon is done, shove it out of the way and fry your eggs
